Whoever said ignorance is bliss, never tasted bison tartar with béarnaise mousse, capers, topped with a quail egg.  I didn’t know what I was missing, but I won’t forget this culinary delight, and I’ll definitely be back for more.

The Gentleman Farmer is an intimate, authentic retreat from the hectic streets of Manhattan.  Executive Chef and owner Karim Nounouh combines his French culinary training with fresh local ingredients to create beautifully presented, mouth-watering creations.   Located on Rivington Street, this is the place to go for a clean, farm to table meal.  I was delighted to find this hidden gem, perfect for warm moments with good friends.

If you’re looking for a vegetarian option, try the beet salad. With golden and chioggia beets, burrata and spiced nuts it is perfectly balanced in taste and texture.  I personally have a weakness for anything cream filled, and a perfect burrata is one of my favorite fresh cheeses.

I suggest if you visit the Gentleman Farmer, you go with a couple friends. Share different dishes to experience all the delicious fare.

When I stopped eating processed foods, going out to dinner became a stressful endeavor.  I hated asking the server if they fried in soybean oil and discussing my food allergies and restrictions.  It was embarrassing and made me feel high maintenance, inconveniencing others with my problems.

When you change the way you eat, the truth is, it is more work.  Often I find a lot of pseudo “healthy” restaurants that have more junk hidden in their food than they want anyone to know.  Sometimes restaurants that seem clean are just using “healthy” or “local” as a gimmick, but the ingredients aren’t any better than a chain restaurant.

Why is it so hard to find restaurants and whole foods sans processed ingredients like those derived from soy?  The financial incentive for restaurants and producers to use soy fillers and low quality emulsifiers is substantial

  • Soybean subsidies totaled $27.8 billion from 1995-2012.
  • 93% of soy in the United States is genetically modified.

If you do eat soy, try to eat organic soy, organic means not genetically modified.  Don’t get me wrong; there are some cuisines that soy sauces and edamame make great.  The thing is, quality clean soy products are obvious and don’t turn up in unexpected placed in your diet.  Highly processed soy is in things you would never have guessed: from sauces to baked goods to vitamins.  Even most gum and chocolate!

After asking the soy question so many times, you realize there is a culture in the restaurant business.  There are places that don’t even know if they use soy, and there are foodies.  When you ask a foodie if they use soy oil in their kitchen they always say the same thing time and again, “not here”.  The tone is usually pretty much we are better than that.  So after much discomfort, my high maintenance issues with food sensitivity forced me to eat clean whole foods and the research can pay off when you find beautiful dishes like these.
